Port Phillip Estate Shiraz Muscat and while the tannins areCrafted with minimal intervention, this wine was fermented with ambient yeasts in an open top concrete fermenter for 16 days, followed by indigenous malolactic fermentation and 13 months of maturation in old French oak barriques. It was bottled unfined to preserve purity. The nose is beautifully perfumed with vibrant blackcurrant, redcurrant, and raspberry, lifted by earthy spice. The medium bodied palate is finely structured, revealing layers of
